CHICKEN LETTUCE CUPS w apricot sauce

ingredients                                                                             for the sauce

4 chicken breasts                                                                  1/2 cup soy sauce

for the marinade                                                                    1 tsp sesame oil

1 tsp sesame oil                                                                     3 tbsp minced garlic

1 1/2 cups soy sauce                                                             3 tbsp minced ginger

2 cloves garlic minced                                                          1-3 tbsp sambal hot sauce

1 cup honey/coconut sugar                                                  3 tbsp organic apricot jam

1/2 cup ginger, grated                                                           1/4 cup rice wine vinegar

1 tbsp cilantro minced                                                           1 tsp minced cilantro

2 tbsp green onion sliced                                                      2 tsp sesame seeds

for the lettuce cups                                                                 3 tbsp hoisin sauce

1 head butter leaf lettuce

carrot/cucumber/peas/chopped peanuts                                                        

bean sprouts/ mushrooms/etc!!

 

This is a good meal to prep ahead of time, throw some brown rice in the rice cooker for the kiddies. And it kind of comes together simply and beautifully on its own! We make this a lot.... sometimes w shredded pork and some of the veggies steamed for the kids. It's also great through out the week as a lunchtime salad.

Combine all the ingredients for the marinade and marinate chicken, refrigerated for 30 minutes or overnight. (I like to use 1/2 cup honey and 1/2 cup coconut sugar, but feel free to use your sweetener of choice). Grill chicken until cooked through.

In a medium bowl whisk together all the ingredients for the apricot sambal sauce This is the yummiest part!!   Use 1 teaspoon sambal hot sauce for mild, 2 teaspoons for medium, and 3 teaspoons for hot.... I recommend 2;)  A lot of the sauce ingredients can be found in the Asian section of your local grocery store.

Dice up desired toppings. We used bell pepper, celery, carrots, mushrooms, cucumber, peas, and chopped peanuts.  (I think they are best raw.)  Rinse lettuce leaves.  Assemble with sliced chicken, toppings, and apricot samba sauce. enjoy!
